Spicy vegetable korma

4 fresh baby corns cut into half
6 small florets of cauliflower
Handful of chopped French beans
1 carrot diced
Diced paneer (optional)
1tbsn ghee
1 tspn cumin seeds
1 onion chopped
2 tspn garlic paste
2 tspn ginger paste
2 tspn fresh green chilli paste or finely chopped
1 tspn salt
1 tspn curry powder
½ cup of coconut milk
½ cup of cooking cream
½ cup of onion stock (blend onion with water in a blender and reduce down)

Heat the ghee, add the cumin seeds sizzle for a few seconds then add the chopped onions and fry until golden brown. Add the garlic, ginger, chilli, curry powder and salt and cook for a few minutes, then add the onion stock and all the veg, simmer until vegetables are soft.

Add coconut milk and cream and paneer (optional), reduce down to a thick sauce. Water can be added if it is too thick. If it too bland add more garlic, ginger, chilli and salt.

Serve hot with fresh coriander with pilau rice.
