Recipes by Pushpa from the Spice Hut
4 chicken legs or breast
½ pint of natural yoghurt
½ tspn ground ginger
1 tbspn paprika
½ tspn garlic paste
4 bay leaves
1 tbspn tomato puree
juice of 2 lemons
1 tspn salt
Wash and skin the chicken. Prick all over with a fork.
Mix all ingredients and pour over the chicken, making sure to rub well into the chicken and cover with foil and leave in the fridge to marinate the chicken for 24 hours.
To cook place the marinated chicken on a wire rack in a roasting tin making sure to put all the marinade over the chicken.
Bake in a medium oven 180ºC for 90 minutes, turn the chicken and continue to baste making sure both sides are cooked.
Serve on a hot sizzler with salad and raita.
