Italian pork steaks are prefect together with tomatoes. The dish is easy to prepare and tastes delicious.
For four people
2 tablespoons of olive oil
A large onion, roughly chopped
A clove of garlic, crushed
400g tin of chopped tomato
4 pork steaks, about 125g
75 g black olives, pitted
2 tablespoons of freshly baked basil
salt and pepper
Freshly grated Parmesan to serve
TIP: Parmesan is a long matured Italian hard cheese with a very strong flavour. It is strong enough to use in small quantities. I personally prefer a little more ....
Heat the oil in a large pan. Add onions and the garlic and stir for 3-4 minutes until tender.
Add tomatoes and boil for about 5 minutes until the tomato juice starts to thicken.
Cook the steaks under a pre-heated grill on both sides for 5 minutes, or fry in a
pre-heated pan until they are golden brown and crispy. Then set aside and keep warm.
Add the olive oil, and basil to the sauce in the pan and then stir, season to taste with salt and pepper.
Spread the steaks on preheated plates. Pour the sauce over each. Garnish with olives and parmesan and serve immediately.
