Recipe by Pushpa from Spice Hut
2 large onions diced
3 tsp madras curry powder
½ cup of tomato frito/ puree
½ pint water
2 tsp chilli dried or fresh
Fresh coriander for garnish
2lb chicken pieces
Salt as required
Fry the onion gently in the oil until it starts to brown, add curry powder, salt, garlic, ginger, chillies and stir for a minute more.
Add the chicken pieces and fry further for 10 minutes, add tomato and water, bring to boil and cook on medium heat, stir regularly until cooked with a thick sauce.
Check the flavour – remember madras has a kick to it.
Enjoy with rice and naan.
